Citral is widely utilized in flavoring, fragrance formulation, and food preservation, and has been extensively studied for its antimicrobial, antioxidant, and cytotoxic activities, which are primarily associated with membrane disruption and oxidative stress mechanisms.

Chemical Identity and Isomerism

Citral consists of two stereoisomeric aldehydes sharing the same molecular formula (C₁₀H₁₆O) and a molar mass of 152.24 g·mol⁻¹. These isomers differ in the configuration of the double bond located at the C2–C3 position:

• Geranial (E-citral): the trans isomer, characterized by a sharper and more intense citrus-like odor.
• Neral (Z-citral): the cis isomer, exhibiting a softer, sweeter, and more delicate lemon-like aroma.

Structural Features and Reactivity

Both isomers belong to the class of α,β-unsaturated aldehydes and possess a conjugated system involving double bonds at C2=C3 and C6=C7, along with a terminal aldehyde functional group at C1. This structural configuration confers high chemical reactivity, volatility, and relative instability. Physicochemical Properties

Citral typically appears as a yellow to pale yellow, mobile, and volatile liquid with a strong, fresh lemon-like fragrance. It has a boiling point in the range of 228–229 °C. While it exhibits low solubility in water, it is highly soluble in organic solvents such as ethanol and diethyl ether. Its lipophilic nature facilitates its partitioning into lipid membranes, which plays a key role in its biological activity, particularly its antimicrobial and cytotoxic effects.
