Cow’s milk contains 25 different proteins, but only the whey proteins α-lactalbumin, β-lactoglobulin, BSA, and lactoferrin, as well as the four caseins, have been identified as allergens. beta-Lactoglobulin (BLG) is a member of the lipocalin protein family and a major food-borne allergen in humans. It binds retinol and is probably involved in the transport of that molecule. Numerous in vitro studies have suggested a role for BLG in molecular transport processes; however, its physiological role remains enigmatic.
