Maltose monohydrate is a degradative product of Starch and substrate of α-Glucosidase. α-Glucosidase hydrolyses Maltose to Glucose. Maltose monohydrate has the ability to protect proteins, membranes and the photosynthetic electron transport chain under heat stress and freezing stress[1][2].
