Tagatose is a naturally occurring ketohexose monosaccharide with the molecular formula C6H12O6 and a molar mass of approximately 180.16 g/mol. It is a functional sweetener and a stereoisomer (epimer) of D-fructose, differing specifically in the spatial configuration of the hydroxyl group at the fourth carbon (C-4). Tagatose is a rare sugar found naturally in small quantities in dairy products and some plant gums, such as Sterculia setigera gum.
Chemical Structure and Properties
Tagatose’s structure features a ketone group at C-2 and specific hydroxyl orientations that distinguish it from fructose and other hexoses. In aqueous solution, it predominantly adopts an α-pyranose ring form and crystallizes as a white, odorless powder with a melting point between 133–137 °C. It is highly soluble in water (~160 g/100 mL at 20 °C) but poorly soluble in ethanol. Tagatose exhibits a specific rotation between -4 and -5.6° in aqueous solution, reflecting its unique stereochemistry. Being a reducing sugar, it participates in Maillard reactions, which influence browning and flavor development in foods during heating.
Applications in Food and Health
Tagatose has about 90% of the sweetness of sucrose but provides significantly fewer calories, making it an attractive low-calorie sweetener alternative. It is utilized in confectionery products, including chocolates, hard candies, fondants, fudges, and caramels, due to its good crystallization properties and similar sweetness profile. Additionally, tagatose has low glycemic impact and is tooth-friendly, contributing to reduced risk of dental caries. It is also under investigation for therapeutic use in managing obesity and type II diabetes, thanks to its functional effects on metabolism and potential health benefits.
Tagatose is a rare ketohexose with promising industrial and health-related applications. Its distinctive stereochemistry as a fructose epimer, efficient production from lactose, and favorable properties as a sweetener position it as both a valuable food additive and a functional nutraceutical undergoing further research for metabolic disease management.
